Make more cookies? Sure!

I usually post recipes on my cooking blog MomCooks, so today, you are getting a special treat. I’m going to be talking about a kitchen gadget I do not yet own, but would love to have SO much, a Hamilton Beach® Stand Mixer. Regular handheld mixers are fine for jobs like blending pancake batter, but for big jobs like making enough dough for up to 9 dozen cookies, or for 4 one pound loaves of bread, a heavy duty stand mixer is easier and quicker.

My family’s favorite cookie that I make is the recipe on the back of the Tollhouse Mini Morsels package. I used to use regular chocolate chips in recipes, but one day I picked up Mini Morsels by accident, and when we saw how the mini chips meant more chocolate per square inch of cookie, it was requested by my husband and the boys that I make ONLY Mini Morsel cookies from then on. That’s how good they are! This is the recipe:

INGREDIENTS

2 1/4 cups all-purpose flour
1 teaspoon baking soda
2 teaspoons salt
1 cup butter or margarine, softened
3/4 granulated sugar
3/4 cup packed brown sugar
1 teaspoon vanilla extract
2 large eggs
1 (12-ounce) package or 2 cups NESTLÉ® TOLL HOUSE® Semi-Sweet Chocolate Mini Morsels
1 cup chopped nuts (optional)

DIRECTIONS

1. Preheat oven to 375. Combine flour, baking soda and salt in small bowl. Beat butter, granulated sugar, brown sugar and vanilla extract in large mixer bowl until creamy. Add eggs one at a time, beating well after each addition; gradually beat in flour mixture. Stir in morsels and nuts. Drop by rounded tablespoon onto ungreased baking sheets.
2. Bake in preheated oven for 9 to 11 minutes or until golden brown. Cool on baking sheets for 2 minutes; remove to wire racks to cool completely.

Makes 5 dozen.

But when it says it makes 5 dozen, it means 5 dozen cookies the size of silver dollars. And I don’t know about you, but we like our cookies to be, well, bigger. So I try to double the recipe, but there is just no way that my hand held mixer can power through that much dough. If I had a Hamilton Beach® Mixer, the kind that stands up on your counter, I could easily make a double batch of cookies. My husband thinks we wouldn’t have any room on our counter for one, but believe me, I would MAKE room :)

Do you have a stand mixer? If so, do you find that it makes large mixing jobs easier? What color is it? I like the names of the colors of the Eclectrics® Mixer-Sugar, Apple, Pineapple, Licorice. I would probably buy the silver one, which is called Sterling. Besides cookie dough and bread dough, does anyone else use a stand mixer for something? I was just thinking about mashed potatoes, too, you could make a LOT of those in a stand mixer. And now I’m hungry. Please feel free to copy the cookie recipe and make some this weekend!

    I do have a stand mixer, but it is the KitchenAid mixer, and I use it probably every day. Or at least nearly every time I cook. I love, love, love my mixer.

    In fact, just this weekend I was telling my husband that he needs to buy me more mixing bowls, because I’m tired of having to switch between the ONE bowl that I own.

    This is very important when buying a mixer: make sure you can buy extra bowls for it. (You can with a KitchenAid mixer, but I’m not sure about the Hamilton Beach.)

    Jes-Thanks for that tip, I wouldn’t have thought of it. Are the extra bowls so that you can store what you have mixed in the fridge? I’d love to know what you use a stand mixer for, so I have a better argument when I convince my husband to let me buy one :)

    I got my KitchenAid Professional 600 series with a bowl lift stand when I burned out my hand mixer making ginger cookies. I have my mixer on my kitchen counter with cabinets above it and if the head tipped up, I would have to pull out the mixer every time I wanted to use it or else the head would hit the upper cabinets. With the bowl lift stand, I don’t have to move it. I use my mixer ALL the time and LOVE it. I use it for cookies, bread, pizza dough, muffins, pancakes, waffles, mashed potatoes, cakes-any thing I need a mixer for-I don’t own a hand mixer anymore. My mixer has a juicer attachment that I’ve used several times too and it sure made juicing lemons a breeze. I would agree with chirky about getting an extra bowl; when I’m making several different kinds of cookies, it would be really nice to have a clean bowl ready to go without having to wash my only bowl. I’m just tickled to finally have a stand mixer, even if I only have one bowl! The color of mine is “nickel pearl”. Thankfully my husband loves what comes out of the mixer, he actually bought the stand mixer for me after I’d done all the research and presented my findings to him. He had to laugh when I said it’d match his Harley though. Good Luck!
