Back to School Recipes from Mission Flour Tortillas

I’m totally lazy when it comes to summertime meals, but especially so with breakfast and lunch. I let my two oldest kids make up their own meals from what’s available in the kitchen, and usually can get one of them to make something for their sister, too. Feedback for Mission: The drop-down menu does not list “eggs” as a protein, so none of the breakfast wrap recipes come up. Also, there is not a single recipe that uses turkey ?!?  The aforementioned turkey, cheese and lettuce, with some mayo or ranch dressing rolled up in a flour tortilla, is one of my kids’ favorites!  Please add some turkey recipes :)

Here’s some recipes I found that I can see my kids eating:

  • Sunrise Breakfast Burrito – I would buy a bag of already chopped and frozen bell pepper mix to speed this up!
  • Chicken Club Wrap – I doubt I’d get the boys to eat the avocado, but Kaitlyn and I definitely would!
  • Touchdown Tacos – We used to do this when the boys were little, put a hard taco shell inside a soft flour tortilla so the hard shell didn’t crumble to pieces when they bit in. I’d forgotten about that until I saw this recipe!

    I have to try the hard taco inside a soft tortilla. I sometimes see pictures where the soft tortilla is lightly toasted in a little oil (which I like hehe)

    Yes, this time of the year when my children are to go to school is difficult for them because they are going to get used to a new schedule.

    Hello! Ella’s first day of 1st grade is today, I’m positive she’s soo tired. Our sleep schedule was ridiculous this summer. I was pregnant and liked to sleep in and so did she as she is queen of the “five more minutes.”

    Thanks for the well wishes for baby Jack, he’s heading the right direction with IV antibiotics, we’re on day 3/10 in the NICU. It was late onset Strep B and we caught it before it turned into meningitis. Scary how fast a perfectly healthy one month old can get so sick.

    Wrapping a hard taco inside a soft tortilla is the way to go especially for kids eating. A lot less messy.
