This is what I’m planning to make this week:
Monday: Baked fish fillets, garlic mashed potatoes, steamed peas
Tuesday: Spaghetti with Meat Sauce, garlic toast, steamed corn
Wednesday: Cheesy Chicken Quesadillas, mexican rice
Thursday: Crockpot BBQ Chicken, mashed potatoes, green beans
Friday: Pizza night
Saturday: Leftovers
Sunday: Sloppy Joes, baked fries, salad

Ugh, I really need to start doing Monday menu plans, but I’m honestly more of a wing-it kind of gal. I cook for my freezer so often that the rest of the week I basically rummage around in the fridge to find what I need to use up, look for something in the freezer to go with it, and throw it together a half hour before we eat.
I need more [albacore] tuna ideas. Turns out half a cow in November just ain’t gonna cut it (we’re almost out!) for the hollow-legged crowd. Sigh. So now I need to move through all my other proteins in the pantry and freezer.
Having read your menu gave me the idea of what to prepare for the coming days. Sometimes I stick to my one week menu, sometimes I can’t. It’s so frustrating when I can’t cook what’s on my menu but as long as my family enjoys what is on the table then I become happy. I’m still trying my best to stick with my one week menu though.
