It’s the first official day of summer break for my kids and parents know what that means – they are going to be in and out of the kitchen all day. The boys don’t eat breakfast, at least not in the traditional sense. Ryan will have some toast and peanut butter when he gets up and Nathan has coffee with creamer and sugar. But then the bored snacking will start, or at least they will attempt to sneak as many snacks out of the kitchen as they can without me noticing. I want to plan ahead for snacks and lunch so that I’m not caught up in work and suddenly it’s 2:00 and I have no idea what to fix.
To help me with my planning, I’m using a meal planning binder I bought from Christine of Dine Without Whine called “Kid Approved Meals”. It’s got 13 weeks of breakfasts and lunches with a shopping list for each week, plus snack ideas and a section to fill in with printed-out dinner recipes from Christine’s Dine Without Whine Weekly Menu Plan service. MENU MONDAY on TABLE FOR FIVE – WEEK OF JUNE 11 2012
Monday
Breakfast – Bisquick pancakes, bananas, milk
Lunch – Stuffed chicken breasts (bought from frozen at Meijer), buttered noodles, carrots
Dinner – Easy Salsa Chili, Jiffy corn muffins
Tuesday
Breakfast – Scrambled eggs, sausage, orange juice
Lunch – Chicken and Stars soup, cheese toast, grapes
Dinner – Slow Cooker Creamy Chicken Quesadillas, Mexican Rice
Wednesday
Breakfast – Cereal with milk, toast with fruit spread
Lunch – Meat and cheese sandwiches, carrots and dip, apples
Dinner – Cola Chicken, mashed potatoes, steamed peas
Thursday
Breakfast – Blueberry muffins, bananas, milk
Lunch – Chef salads, lemonade
Dinner – Sloppy Joes, baked fries, green beans
Friday
Breakfast – Cereal with milk, toast, apples
Lunch – Tuna salad sandwiches, chips, carrots and dip
Dinner – PIZZA NIGHT!
Saturday and Sunday
Breakfast is make your own, lunch is scrounge around in the fridge for leftovers, dinner to be determined

Whew! My goal for this summer is to strike a balance between having enough food in the house to feed myself and the kids during the day, and keep the kids from eating all the groceries on Monday and then whining about how there’s “nothing to eat” LOL
